We pick our Blanc de Blancs grapes by hand during the cool morning hours to ensure they arrive at the winery in pristine condition. The individual vineyard lots are fermented separately at cool temperatures in small stainless steel tanks to preserve freshness and fruit intensity.
A few selected lots are aged in French oak barrels to add depth, complexity and spiciness to the final blend. This Blanc de Blancs spent 48 months en tirage, which fosters its wonderful complexity. After disgorging, a small dosage is added back to balance the wine’s acidity.
Our Non-Vintage Blanc de Blancs is not typically barrel aged, which makes its style the brightest of the Mumm Napa wines. It displays complex aromas of lime, sweet Meyer lemon and golden apple. Crisp and focused on the palate, its bright citrus, apple, peach and brioche flavors persist throughout a long, mouthwatering finish.
